So how well can Wii U and Switch be TASed now? I've just recently seen 3DS TASes with Smash Bros.
WiiU is pretty mature and the Switch is getting better and better every day. For the Switch, it's game specific regarding how well it works but SMO works well. You can see the current compatibility list here:

Switch TASing is currently not done through an emulator, it's done on-console using homebrew.

I have a separate modded switch because I'm really into Super Mario Odyssey mods (there are some really great ones with a TON of work in them). I was able to buy just a used tablet at Gamestop (before the Switch was so hard to find) and used that as my modded console. Then I have my regular console that I use for retail games and online stuff. You CAN do this whole dual-boot setup that /u/Kaipolygon mentioned but it's much easier just to keep them separate if you have the means.
You definitely need to make sure your switch is old enough to be modded though. There are sites you can use to look up by serial number. There is now a hardware mod that can be installed for newer switches (including the Switch Lite) but if you aren't good at soldering, you would need to have someone install that for you.
My bad. I should have been more clear. I mean I bought just the Switch tablet without the joycons/dock/power adapters/etc. There isn't a way to use a normal tablet/iPad as a Switch console.

Huh, didn't know. I just knew that it's technically possible to hack a PS4 pro so it can't require THAT old of firmware relatively speaking compared to the consoles lifetime.
It's a little hard to compare to the switch where they shipped the consoles at launch with what ended up being an unpatchable hardware vulnerability that they were supposedly unaware of. Though to be fair it's not like you can easily obtain an original Switch with that vulnerability still from a store if you don't already have one. The fact that said vulnerability has basically permanently opened up the Switch to hacks for the foreseeable if not permanent future doesn't help though for sure.
I think there's also something to be said for the fact that Nintendo consoles in general have developed so much of a hacking scene ever since the DS and Wii era that there's just more people actively looking for and finding vulnerabilities and such. Doesn't help that Nintendo honestly seems really bad at security on their end comparatively to the other console developers. Probably doesn't help that Nintendo has only ever been a game and console company while Microsoft has decades of experience in the computer industry and Sony just has a massive media empire in general.

I'm not sure if this is just bad luck or part of how they allow games access to the consoles in general or what. It could in theory be partially due to how many low budget 3rd party games they end up supporting, particularly through the shop with relatively small indie games. It's also possible Sony and Microsoft simply have more experience with security in regards to the console vs games where their consoles are really more of just computers running games rather than all of the systems resources being available entirely to the game. I know the Switch (and the 3DS I believe) are more along this line as well but that's still relatively new for Nintendo while Sony and Microsoft have been doing it longer.

I honestly think it's kinda the other way around. Sony is the one who has directly sued people for breaking the Playstation. Look at how hard they went after Geohot. I honestly think the thing about the PS4 hacks (and maybe Xbox One hacks) is that a lot of them seem very hardware based rather than software based and from what I've seen this at times leads to shady situations in some less developed countries where one might be able to buy a console already hacked to play pirated games BUT this doesn't necessarily mean there's a big visible online scene to go alongside that. That might have mainly been a thing a few years ago, haven't really seen anything about that since then.
